Think outside the shell for your next taco night with this Mexican salad featuring ground beef, kidney beans, cheese and mixed greens that’s served with a zesty mix of ranch dressing and salsa.

  • 12 oz. lean ground beef
  • 1 pkt (1.25 oz) 40%-less-sodium taco seasoning mix
  • 1 can kidney beans
  • c. bottled ranch salad dressing
  • c. salsa
  • 8 c. bagged salad greens
  • 2 c. broken tortilla chips
  • 1 c. cherry tomatoes
  • 1/2 c. shredded reduced-fat Cheddar cheese
  • 1/4 c. Chopped red onion

Directions

    1. Step 1Heat a large nonstick skillet over medium-high heat. Add ground beef and cook, breaking up clumps with a wooden spoon, about 3 minutes, or until no longer pink. Add taco seasoning mix and cook, stirring, 1 minute more. Stir in kidney beans and heat through.
    2. Step 2Meanwhile, mix ranch dressing and salsa in a small serving bowl.
    3. Step 3Place beef mixture in center of a large serving platter. Surround with remaining ingredients. Serve with the ranch dressing mixture.
