Summer Strawberry Peach Salad With Goat Cheese

  • 1/2 cup balsamic vinegar
  • 1 tablespoon brown sugar
  • 4 cup mixed green salad leaves
  • 12 fresh strawberries, sliced
  • 2 ripe peaches, sliced
  • 1/2 large cucumber, cut into 1-inch pieces
  • 4 tablespoon crumbled feta cheese
  1. In a small sauce pan over medium heat, whisk together the balsamic vinegar and brown sugar until the sugar has dissolved. Bring to a boil. Reduce heat to low and simmer until glaze is reduced by half, about 15 minutes. Set aside to cool.
  2. Lay salad leaves out on 4 serving plates. Top equally with strawberries, peaches, cucumber, and feta. Drizzle with balsamic reduction.
