Steak with Blue Cheese and Fries

When it comes to steak, why mess with tradition? This classic dish is as delicious as it gets, with grilled boneless rib-eye, pungent crumbled blue cheese and shoestring french fries.

  • 4 c. frozen shoestring french-fried potatoes (from a 28-oz bag)
  • 4 well-trimmed 3⁄4-in.-thick boneless beef rib-eye steaks (8 oz each)
  • 1/2 tsp. Pepper
  • 1/2 c. crumbled blue cheese

Directions

    1. Step 1Heat oven to 450°F. Line 2 rimmed baking sheets with foil (for easy cleanup) and heat a large stovetop ridged grill pan over medium heat (see Note).
    2. Step 2Spread frozen french fries in a single layer on baking sheets. Bake 15 minutes, or until golden and crisp.
    3. Step 3Meanwhile, sprinkle steaks with pepper and place on grill pan. Grill 3 minutes. Turn steaks over; scatter blue cheese on top and grill 3 minutes longer, or until an instant-read thermometer inserted from side to middle registers 140°F. Remove and let rest a few minutes (temperature will rise to 145°F for medium-rare).
