- Cooking spray
- 2 c. frozen hash browns (defrosted)
- 2 slices bacon, fried and crumbled
- 1/4 c. shredded Cheddar
- 2 tbsp. finely chopped chives
- Fried egg, for serving
- kosher salt
- Freshly ground black pepper
Directions

- Step 1Preheat waffle iron on medium-high.
- Step 2Spray both sides of the waffle grates generously with cooking spray. Spread about 1 cup hash browns on the waffle iron, focusing on the center of the grate. Sprinkle with bacon, cheddar, and chives. Top with the remaining hash browns and press down to cover.
- Step 3Cook until the hash browns are golden brown and crispy and the cheese has melted. Carefully remove waffle (the perimeter might break!) from the waffle iron. Top with a fried egg, if desired, and season with salt and pepper.
