  • 1 tbsp. sugar
  • 1½ tsp. paprika
  • 1 tsp. sriracha chili sauce
  • Kosher salt, to taste
  • 2 small branzino, black sea bass, or bluefish (about 12 oz. each), gutted and cleaned
