Editor’s Note: This Fried Chicken recipe has only five basic ingredients, so you know you’re getting the full flavor of the chicken without having to dress it up with any fancy seasonings. Flour, salt, and pepper are the key to making a simple breading that’s delicious while not taking away from the chicken itself. This is an easy chicken recipe to use as a base for making chicken wings, or enjoy it on its own for a juicy chicken dinner that’s great for the whole family or a summer cookout.

Ingredients

  • 3 chickens (each about 3½ pounds), cut into small serving pieces
  • 2 cups all-purpose flour
  • 1 tablespoon salt
  • ½ teaspoon fresh milled white pepper
  • Vegetable oil, for frying

Instructions

  1. Pat the chicken pieces dry with paper towels. Mix the flour with the salt and white pepper and dredge the chicken pieces in it. Shake off any excess flour.

  2. Pour ½ inch of vegetable oil into a heavy skillet and place over high heat. When the oil is hot, reduce the heat to moderate. Working in batches, fry the chicken slowly until cooked through and deep golden brown.

  3. Keep the chicken warm in a 275° F. oven until all of the chicken has been cooked.
